지난 7월 18일 생두 수입유통업체인 엠아이커피(M.I.COFFEE, 대표 송현근)와 인터내셔널 커피컴퍼니 안드레아플러스(대표 최상현)에서 운영하는 스페셜티 커피전문점 그레이 그리스트밀이 바리스타 대회 트렌드에 대한 공동 세미나를 개최했다.
‘THE BEST COLLABORATION; 바리스타와 로스터가 말하는 대회 트렌드’를 주제로 한 이번 세미나에서는 2017 한국 내셔널 바리스타챔피언쉽 (KNBC) 우승자인 국가대표 방준배 바리스타와 국내와 세계대회에서 그의 커피콩을 로스팅한 엠아이커피의 박정호 로스터가 대회를 준비하면서 담당한 역할에 대해 이야기했다.
방준배 바리스타는 ‘대회에 적합한 생두 선정과 산지 투어’를 주제로 지난해 11월에 열렸던 세계대회에서 본인이 받은 실제 스코어시트를 면밀히 분석했다. 그는 “대회에서 좋은 성적을 거두기 위해서는 ‘대회가 원하는 것이 뭘까?’에 대한 이해가 필수적”이라고 강조했다.
대회에서 중요하게 생각하는 것이 뭔지 정확히 알아야만 그들이 높은 점수를 주는 포인트에 대한 공략도 가능하다는 것. 또한 대회를 많이 봐야만 그들의 공통적 스토리를 파악할 수 있으며, 생두구매는 바잉파워가 있는 유통업체로 선정할 것을 당부했다.
방준배 바리스타는 “나는 항상 ‘내가 왜 챔피언이 되어야 하는가’에 대한 물음을 고민했다”며, “분명한 목적을 세우고 그것을 위해 달려가면 어느 순간 원하는 결실을 얻을 수 있을 것”이라고 조언했다.

Zo herkenbaar. Mijn dochter zit op het Speciaal onderwijs. Maar ik vraag me steeds vaker af wat er speciaal aan is. Natuurlijk zit ze in een klein klasje, heeft ze miet voor iedere les een andere leraar en er is veel aandacht voor haar. Maar dat schoolse presteren blijft. En de manier van lesgeven ook. Het is duidelijk dat Nikki een beelddenker is en talige informatie lastig verwerkt. Intelligentie is er voldoende. Maar dat past niet in het de manier van lesgeven. En de juf doet echt haar best.
